Pastificio approaches pasta making the same way a winemaker approaches wine, blending heirloom and ancient varieties of organic wheats to form pasta with deeper character, more interesting flavors, higher nutrition value, and that are more easily digestible than highly processed grains. They mill all of their flour in house and source from local family owned farms, ensuring they're investing in local economies and ecosystems.
